Pumpkins are one of my favourite veggies! Their smooth creamy texture makes any dish so perfect! I love them in soups, pureed, as a stew and even in desserts! These babies are in season which means that their vitamins, minerals, and nutrients are perfectly balanced to prepare us for this season and the winter season to come! Eating locally and seasonally can really boost your immune system as nature provides us with the exact veggies and fruits we need for the season we live in!
Pumpkins are packed with fibre which regulates and protects our bowels! Yay! Soo good for smooth skin and a healthy heart with great sources A and B vitamins! You can use pumpkin for such a variety of foods from soups, risottos, stews, desserts and even smoothies! Here’s a yummy smoothie recipe for you!
INGREDIENTS
Serves 1
- 1/3 cup pureed pumpkin
- 2/3 cups almond/oat milk
- 1 frozen banana
- 1 teaspoon chia seeds
- a small handful of kale/spinach
- 1/4 teaspoon cinnamon
- 1 teaspoon agave or honey (or a medjool date)
- 2 ice cubes
INSTRUCTIONS
Optional: 1 scoop of your favourite protein powder.
